Gochugaru (고춧가루)

Korean chili powder is made from ground dried peppers to yield red fine chili powder. It is used to enhance the spicy flavor of many Korean dishes. Korean chili powder, also known as Gochugaru, can be divided into two types based on how it is used. The first kind is coarse chili powder commonly used in Korean cuisine such as kimchi, gochujang or Korean red pepper paste. Aside from making the flavor well-balanced, the peppers also add a pleasant aroma to your meal.

Ganjang or Korean soy sauce is a popular seasoning for the Korean. It can be regarded as an essential item for Korean cuisine that every household must have. Korean soy sauce can generally be classified into 3 categories according to their uses.

  • Guk-Ganjang is the oldest type of Korean soy sauce since the Joseon dynasty. It suits for making soup and spicy soup.
  • Yanjo-Ganjang is the kind of soy sauce made by fermenting soybeans with barley and ground natto to yield a mellow taste. It suits for making salad or dipping sauce.
  • Jin-Ganjang is the type of soy sauce that has undergone 5 years of the fermentation process. It is considered the longest fermented soy sauce of all. It suits for making stew, stir fry, and salad.

Doenjang or Korean soybean paste is made from fermented soybeans and salt. Properly packed in a plastic box with a lid, it offers salted and more mellow flavors than the Japanese miso. Doenjang is generally used for seasoning soup, marinating meat to make other dishes, or a dipping sauce for grilled food.

Gochujang or red chili paste is a Korean condiment that has stolen Thai people’s hearts because of its full flavor. It combines Korean chili powder, fermented soybean, and glutinous rice to add texture. Ssal-sikcho or rice vinegar is one of the condiments that enhance the flavor of various Korean dishes. Mirim is a Korean cooking white wine made from rice fermented with sugar. With 14% alcohol, the wine can remove unpleasant odors in meat and seafood, especially fish and as a result, it is perfectly used for marinating meat to enhance the sweet flavor and the tender texture such as Korean grilled pork or Samgyeopsal-gui. 1. Samyang Hot Chicken Flavor Sauce 30 g.

2. Sugar 25 g.

3. Light soy sauce 15 g.

4. Rice vinegar 15 g.

5. Honey 8 g.

6. Tomato sauce 8 g.

7. Water 45 g.

8. Chopped garlic 1 clove

9. Grated ginger 2 g.

10. Salt 2 g.

Ingredients for Soy Garlic Sauce

1. Honey 30 g.

2. Light soy sauce 30 g.

3. Chopped garlic 2 cloves

4. Grated ginger 2 g.

5. Rice vinegar 22 g.

6. Hoisin sauce 15 g.

7. Roasted sesame oil 8 g.

1. Butter 30 g.

Instructions

1. Begin with marinating chicken wings. Add the wings, chopped garlic, grated ginger, mirin, and salt to a mixing bowl and mix well. Wrap with cling film and leave it to marinate for an hour.

2. Prepare for the crispy flour. Add potato starch and baking powder to a mixing bowl. Put the marinated chicken wings in the flour and complete coat the wings.

3. Bring a pan of oil over medium heat to a boil. Deep fry the chicken wings until golden brown and crisp. Remove them from the oil and set them aside to let the excess oil drain away.

4. To make hot & spicy sauce, put the pan over low heat. Add Samyang Hot Chicken Flavor Sauce, sugar, light soy sauce, rice vinegar, honey, tomato sauce, water, chopped garlic, grated ginger, and salt. Allow it to simmer until the sauce is thickened. Turn the heat off and let it cool down.

5. To make soy garlic sauce, put the pan over low heat. Add honey, light soy sauce, chopped garlic, grated ginger, rice vinegar, Hoisin sauce, and roasted sesame oil. Allow it to simmer until the sauce is thickened. Turn the heat off and let it cool down.

6. To make honey mustard sauce, put the pan over low heat. Stir fry butter and garlic until releasing a lovely fragrance. Then, add mustard, honey, Worcestershire sauce, and apple cider vinegar and enhance the flavor with salt and black pepper. Allow it to simmer until the sauce is thickened. Turn the heat off and let it cool down.

7. The final step is to divide the fried chicken into 3 portions and coat the chicken with 3 different sauces. Then, dish up for serving.
